Basic Salt Japanese-Style Turnip Pickles
(from Easy Japanese Pickling in Five Minutes to One Day)
14 oz/400g turnips
1 3/4 oz/50g turnip greens
1 1/2 tsp salt
Peel turnips. Halve lengthwise and slice thin. Chop greens (use tender, center leaves).
Shake turnips, greens and salt in a sealed plastic bag (I used a Ziploc). Let stand 10-15 minutes.
When soft, knead by hand. Press air out of bag, tie/seal, let stand an hour.
